Blue Arrow is delighted to be recruiting for an experienced Chef de Partie on behalf of a prestigious 4-star hotel in the heart of Edinburgh.

The Role
As Chef de Partie, you will be responsible for the smooth running of your designated kitchen section, ensuring food is prepared and presented to consistently high standards. You will support the Head Chef and Sous Chef while helping to develop junior members of the brigade.
Key Responsibilities
- Take ownership of a designated section within the kitchen.
- Prepare, cook, and present dishes to a consistently high standard.
- Ensure all food is produced using fresh ingredients and in line with established recipes and specifications.
- Maintain excellent standards of cleanliness, organisation, and food safety.
- Supervise and support Commis Chefs and junior team members.
- Ensure all mise en place and service preparation is completed efficiently and on time.
- Monitor stock levels, rotate stock correctly, and minimise wastage.
- Work closely with senior chefs to ensure the kitchen is prepared for business demands.
- Support the delivery of high-quality dining experiences across all food outlets.
- Contribute to a positive, professional, and team-focused kitchen culture.
About You
- Previous experience as a Chef de Partie within a busy, quality-driven kitchen.
- Experience working in a 2 AA Rosette environment is highly desirable.
- Hotel experience within a 4-star or 5-star operation would be advantageous.
- Passion for fresh food, seasonal produce, and scratch cooking.
- Strong organisational and time-management skills.
- Experience supervising and developing junior chefs.
- Knowledge of stock control, food ordering, and waste management.
- Understanding of kitchen costs and gross profit management.
- Ability to remain calm and perform under pressure.
- Excellent communication and teamwork skills.
- Fluent in written and spoken English.
